Chef Thomas Pukkunnel has been a corporate chef at the Paragon Group of Restaurants for over 14 years. He began his culinary career with the Taj group of hotels and has worked with many of India`s most prestigious hotels. He worked on a special project about the historical influences on Kerala food culture, particularly in the Malabar region, such as Portuguese, Arabic, French, and British influences on Thiyya and Mappila cuisines in north Malabar. Chef Pukunnel has also participated in numerous culinary workshops with renowned chefs.
